Roast Pumpkin Seeds

If you get pumpkins in fall for home decor, don’t toss those when the season is over. The small baking pumpkins can be baked for pumpkin pies and roasted pumpkin seeds are delicious.

Or so I heard. I decided to give roast pumpkin seeds a try after I baked those two baking pumpkins in the photo I used to make a pumpkin puree for pies.

After washing and halving the pumpkins, I removed the seeds and place them in a bowl where I could clean them and remove any pulp.

I then scattered the seeds on a cookie sheet and let them dry overnight.

Once ready to roast at 350F, I tossed the seeds with the following:

  • ▢¾ cup raw pumpkin seeds

  • ▢1 tablespoon extra virgin olive oil

  • ▢½ teaspoon salt

  • ▢¼ teaspoon garlic powder

  • ▢¼ teaspoon paprika

  • ▢⅛ teaspoon black pepper

I tossed them every 5-10 minutes to make sure they all were roasted.
