I started making cottage cheese bread for the high protein and found it delicious and a nice alternative to regular breads.
Then I tried to turn this into a pizza sprinking cut up onions, tomatoes and green peppers. Yes, this is a good option, too!
Cottage Cheese Bread Recipe
You will need:
1 cup flour
1.5 teaspoons baking powder
1/4 teaspoon salt
1 cup cottage cheese
1 cup shredded cheddar cheese
To make:
Preheat oven 350F.
Mix all ingredients until into a ball.
Spray cooking pan. Spread on cooking pan with a roller.
Sprinkle with sharp cheddar cheese or a cheese of your choice. To turn this into a pizza, add diced tomatoes, green peppers, onions and whatever other toppings you like. I love vegetarian pizzas so I might add mushroom. For additional protein, add cooked hamburger, sausage, pepperoni to taste.
Cook for 20-25 minutes, until the cheese turns dark and crispy.
Allow to cool before eating.
